Diabetic cookie recipes for healthy living.....

 

Title:  Oatmeal Raisin Cookies
Source: Sweet One®
   
Ingredients:  1/2 cup reduced calorie margarine, softened
1/3 cup granulated sugar
9 packets Sweet One granulated sugar substitute
2 large egg whites
2 teaspoons vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups regular or quick-cooking rolled oats
1/4 cup seedless raisins
   
Instructions: 1. Preheat oven to 350°F. In large bowl with electric mixer at medium speed, beat margarine, sugar and Sweet One until well-blended. Beat in egg whites and vanilla, then flour, baking soda and salt. Stir in rolled oats and raisins. Drop dough by rounded teaspoonfuls onto ungreased cookie sheet, pressing down slightly with back of spoon. Bake 6 to 8 minutes or until golden around edges. Remove cookie sheets to wire racks and let cool 1 minute. With spatula, gently remove cookies to wire racks and cool completely. Makes 2 dozen cookies.

Title:  Sweet as Angels Kisses

Ingredients:  Sweet as Angels Kisses
4 egg whites, at room temperature
1/4 t. cream of tarter
1/8 t. salt
1 c. granulated sugar
1/4 t. peppermint or mint extract or desired fruit flavoring
few drops of food coloring

   
Instructions: Preheat oven to 250F. cover baking sheets with parchment paper or foil. set aside: Beat egg whites in large bowl with electric mixer until foamy. Add cream of tarter and salt. Beat until soft peaks form. Add sugar, beating until stiff peaks form. beat in extract and food color. Drop rounded tablespoonfuls of egg white mixture onto prepared baking sheets. Bake until cookies are firm to the touch and just beginning to brown around the edges, 35 to 45 minutes. Makes 20 servings Dietary exchanges 1/2 starch 3 cookies per serving: Calories 42, 0 fat, 10 g. carbohydrate
