Title:  Diabetic Candy Bars

Ingredients:  1 pkg. Carnation hot cocoa mix (sugar free),(individual size)
1/3 c. quick cooking oats,
2 Tbsp. raisins,
2 Tbsp. nuts (chopped),
1 Tbsp. peanut butter,
1 pkg. Sweet 'N Low,
2 Tbsp cold coffee
   
Instructions: Mix all ingredients together, adding coffee last. Pat out in a bar shape. Put in aluminum foil and freeze.
   
Tips: Very good on weight loss programs or for diabetics. May make several bars at a time by adding X number of ingredients per bar.

Title:  Diabetic Fruit Cake

Ingredients:  2 c. water (to cook raisins in),
1 c. unsweetened applesauce, 3/4 c. cooking oil,
2 c. self-rising flour, 1/2 tsp. vanilla,
2 c. raisins, prunes, or dates,
2 eggs,
2 Tbsp. sweetener (liquid),
1 tsp. soda,
1 1/4 tsp. cinnamon
   
Instructions: Cook raisins in water until done. Add applesauce, eggs, sweetener, and oil; mix well. Blend in other ingredients, which have been sifted together. Add vanilla. Pour into greased and floured pans. Bake for 1 hour in oven until done at 350 degrees.

Title:  Diabetic Jelly

Ingredients:  2 c. unsweetened juice of your choice, 1 Tbsp. unflavored gelatin,
1 1/2 Tbsp. liquid sweetener
   
Instructions: Dissolve gelatin in 2 tablespoons juice; set aside. Add sweetener to juice. Let come to boil. Remove from heat and add gelatin. Pour into jar and let cool. Keep in regrigerator. Make 1 pint at a time.

Title:  Diabetic Peanut Butter Cookies

Ingredients:  1/3 Cup Flour
4 Tb creamy Peanut Butter
1 Egg well beaten
1/4 ts baking soda
1/4 ts baking powder
1/2 cup sugar replacement
1/4 cup margarine
1 TB light brown sugar
Preheat oven to 375 degrees F. Grease cookie sheet lighty. Sift flour, baking soda, and baking powder. Work margarine and peanut butter with spoon until creamy, gradually add brown sugar replacement, continue working until light. Add granulated sugar replacement and egg. Beat well. Mix in dry ingredients thoroughly. Drop by teaspoonfulls onto cookie sheet. flatten with tines of fork in a criss-cross pattern. Bake until done, 8-10 minutes. Makes 18 cookies.
   
Instructions: Mix looks runney but will form into a shaped cookie when baking in oven.
   
Tips: I loved this recipe. Taste truely peanut buttery and browns nicely. Watch over carefully can burn easy.

Title:  Fat Free Veggie Dip

Ingredients:  2 c. Fat free mayo
2 c. Fat free sour cream
2 T. dried onion flakes
2 T. dried parsley
2 T. dried dill
2 T. seasoned salt
   
Instructions: Mix all together and served with your favorite veggies. 1T. 10 calories 1T. 3 carbs 4T. is 1 weight watcher point
   
Tips: This makes allot of dip, so I sometimes half the recipe. If you are on weight watchers use your free veggies
